Located behind the Convent of San Pedro Regalado in La Aguilera, it takes its name and history from this monument from the beginning of the 15th century.

Just 600 limited bottles per vintage.

Tasting Notes

TASTING NOTES:

ON THE NOSE. Elegant, sophisticated, wide, deep. Many aromatic nuances well defined and well linked, with fine development and life ahead. Varietal aromatic base, with hints of black riverside fruits, mineral and floral touches; Spicy bouquet, touches of tea and tobacco leaves, scrubland and natural coffee, ink on the background.

ON THE MOUTH. Excellent balance in the mouth, with a fleshy, consistent body and center and a creamy touch (especially evident at the start), firm tannins but well tamed by aging, fresh acidity that compensates for the alcohol, tasty, expressive and elegant in the aromas. in the mouth, with a developed bouquet on a clear background of ripe fruits, long and broad aftertaste.

GASTRONOMY. Red wine rich in subtle nuances but with enough energy to offset the fragrances of spicy dishes, such as bushmeat dishes (preferably with pigeon or partridge), stews such as beef shank, osso-bucco or oxtail. Red meats allow their aromatic display without interfering, as do roasts (they have enough acidity and tannins to combat the fat of a lamb, for example) or fried suckling pig. Cured sheep’s milk cheeses.
