Ageing
De-stemmed bunch with manual grape selection on receipt, fermentation in concrete egg vat with monitoring for optimum temperature. Malolactic fermentation after gentle press.
Tasting notes
lntense and lively cherry red color, with a purple rim. Deep in the nose with tones of black and red ripe fruit. Balsamic, mineral and spicy hints. On the palate it is elegant, with good backbone, supported by quality tannins. A lingering finish.
