Tasting Notes
NOSE. Elegant, sophisticated, full-bodied, deep. Many well-defined and well-set aromatic nuances, with fine development and plenty of life ahead. Varietal aromatic base, with hints of black Ribazo fruits, mineral and floral touches; spicy bouquet, touches of tea and tobacco leaves, lowland and natural coffee, inky background.
MOUTH. Excellent balance in the mouth, with a fleshy body and centre, consistent and an unctuous touch (especially evident at the start), firm tannins well tamed by ageing, fresh acidity that compensates for the alcohol, flavourful, expressive and elegant in the aromas in the mouth, with well-developed bouquet on a net background of seasoned fruits, long and broad aftertaste.
GASTRONOMY. A red wine rich in subtle nuances but with enough energy to compensate for the fragrances of spicy dishes, such as game (better with feathered game such as pigeon or partridge), stews or casseroles like cow hock, osso bucco and oxtail. Red meats allow for its aromatic display without interfering; the same goes for roasts (it has enough acidity and tannins to offset the fat on a lamb, for example) or fried suckling pig. Good with cured sheep’s milk cheeses.
